Tarhana soup with mushrooms and yogurt

What a tasty soup! This tarhana dish with earthy mushrooms makes the perfect traditional comfort food for cold days and nights!

Ingredients
1½ cup tarhana from wheat (sour)
1½ cup fresh white mushrooms, thinly sliced
250 g strained Greek yogurt
7 cups chicken broth
4 tbsp butter
1 tsp dried mint
salt, pepper

Method
Step 1
In a large pan heat broth on medium heat and stir in tarhana until it comes to a boil.

Step 2
In the meantime, in a pan melt butter and cook mushrooms for 5΄ until wilted. Add mushrooms to the tarhana, season with salt and pepper and simmer on low heat for 20-25 minutes or until tarhana becomes soft.

Step 3
In a bowl mix yogurt with 3-4 tbsp liquid from the pan and stir in mint. Divide soup in bowls and serve with a spoonful of yogurt.
